Ingredients
  

Main Ingredients
  • 3 pieces ripe bananas Use really ripe bananas for maximum sweetness and flavor.
  • 3 large eggs Can substitute with flaxseed meal mixed with water for a vegan option.
  • 1/2 cup almond flour
  • 1/2 cup coconut flour
  • 1/4 cup melted butter Can substitute with coconut oil or a dairy-free butter substitute.
  • 1/4 cup erythritol Regular sugar can be used but it won't be keto-friendly.
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon Feel free to experiment with flavors.
  • 1/4 tsp salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the eggs, melted butter, erythritol, and vanilla extract. Mix until well combined.
Mixing Dry Ingredients
  1. In a separate bowl, whisk together the almond flour, coconut flour, baking soda, cinnamon, and salt.
  2. Gradually combine the dry ingredients with the wet mixture until just mixed.
Baking
  1. Pour the batter into the prepared loaf pan.
  2. Bake for 50-60 minutes or until a toothpick comes out clean.
  3. Allow to cool before slicing.

Notes

Store in the fridge for about one week or slice and freeze for up to three months. If the bread is browning too quickly, cover it with foil halfway through baking.
