Ingredients
  

Pasta and Vegetables
  • 8 oz pasta (fusilli or penne) Cooked according to package instructions
  • 2 cups fresh corn (or canned/frozen corn) Fresh corn preferred
  • 1 cup red bell pepper, diced
  • 1 cup green onion, thinly sliced
  • 1/4 cup cilantro, chopped
  • 1/2 cup cherry tomatoes, halved
Dressing
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice Freshly squeezed preferred
  • Salt and pepper to taste

Method
 

Preparation
  1. Cook the pasta according to the package instructions, then drain and let cool.
  2. In a large bowl, combine the cooked pasta, corn, red bell pepper, green onion, cilantro, and cherry tomatoes.
  3. In a separate bowl, whisk together the mayonnaise, sour cream, lime juice, salt, and pepper until creamy and combined.
  4. Pour the dressing over the pasta mixture and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

This salad can be made a day in advance. Store in an airtight container in the fridge for up to 3-4 days. Add a splash of lime juice or extra mayo/sour cream if it seems dry before serving.
