Ingredients
  

Dry Ingredients
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon fine salt
Wet Ingredients
  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons sour cream or plain Greek yogurt
Finishing Touch
  • 1/4 cup coarse sparkling sugar for rolling optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, beat the softened butter until creamy. Gradually add in the granulated sugar and brown sugar until light and fluffy.
  4. Mix in the egg, egg yolk, and vanilla extract. Add sour cream or Greek yogurt and blend until smooth.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Shape the dough into about 1 1/2-inch balls and roll them in the coarse sparkling sugar.
Baking
  1. Place the balls on your baking sheets, spaced about 2 inches apart.
  2. Bake for 10-12 minutes, until edges are golden but the center remains soft.
  3. Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes

These cookies are best enjoyed fresh, but you can store them in an airtight container for up to a week. Consider chilling the dough before shaping for easier rolling. You can also freeze the dough for up to three months.
