Preparation
- Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, beat the softened butter until creamy. Gradually add in the granulated sugar and brown sugar until light and fluffy.
- Mix in the egg, egg yolk, and vanilla extract. Add sour cream or Greek yogurt and blend until smooth.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Shape the dough into about 1 1/2-inch balls and roll them in the coarse sparkling sugar.
Baking
- Place the balls on your baking sheets, spaced about 2 inches apart.
- Bake for 10-12 minutes, until edges are golden but the center remains soft.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack.
Notes
These cookies are best enjoyed fresh, but you can store them in an airtight container for up to a week. Consider chilling the dough before shaping for easier rolling. You can also freeze the dough for up to three months.
