Preparation
- Preheat your oven to 325°F (163°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2 minutes.
- Add the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract.
- In a separate bowl, sift together the flour, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry mixture to the creamed ingredients, mixing until just combined.
- Fold in the chopped candied fruit, nuts, and raisins gently.
- Using a spoon or cookie scoop, drop rounded tablespoonfuls of dough onto the prepared baking sheets, keeping even spacing.
Baking
- Bake the cookies in the preheated oven for 18-20 minutes or until golden brown.
- Allow them to cool on the baking sheet for about 2 minutes before transferring them to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to a week or freeze for up to three months. They can be served with a glaze or alongside cocoa for a festive treat.
