  • 1 large egg yolk
  • 2 teaspoons pure vanilla extract

Preparation
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
  3. In a large mixing bowl, beat the softened unsalted butter with granulated sugar using an electric mixer on medium speed for 3-4 minutes until light and fluffy.
  4. Add the large egg, the extra yolk, and pure vanilla extract to the mixture, beating until well combined.
Mixing and Baking
  1. Gradually incorporate the dry ingredients into the wet mixture, stirring just until combined.
  2. Roll the dough into 1-inch balls and place them on the baking sheets, about 2 inches apart.
  3. Bake for 10-12 minutes, until the edges are lightly golden and the centers are soft.
  4. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack.
