  • 1/2 cup salted butter (1 stick, melted)
  • 1/2 cup light corn syrup Can be substituted with honey or agave syrup
  • 1/2 cup granulated sugar Can be replaced with maple syrup for variation
  • 1/2 cup light brown sugar
  • 1/2 cup sweetened condensed milk Use coconut cream for a vegan version
  • 1 teaspoon vanilla extract Almond extract can be used for variation
  • 1/4 teaspoon table salt Omit if adding sea salt topping
  • to taste Sea salt for topping (optional) Sprinkle when the caramel is warm

Method
 

Preparation
  1. Line an 8x8 inch pan with parchment paper and lightly coat it with cooking spray.
  2. In a large microwave-safe bowl, melt the butter for about 30-45 seconds until fully liquefied.
  3. Add corn syrup, granulated sugar, brown sugar, sweetened condensed milk, vanilla extract, and table salt to the melted butter and stir until smooth.
  4. Microwave the mixture on HIGH for 2 minutes, then stir thoroughly.
  5. Microwave again for another 2 minutes on HIGH until bubbling vigorously and golden in color.
  6. Carefully pour the hot caramel mixture into the prepared pan and spread it evenly with a silicone spatula.
  7. Sprinkle sea salt on top while the caramel is still warm.
  8. Let the caramels cool completely at room temperature for at least 2 hours before cutting into squares.

Notes

Remember to stir well for the perfect texture. Store in an airtight container at room temperature for about two weeks.
