Ingredients
  

For the Brownie Base
  • 1 cup unsalted butter, melted 226g
  • 8 oz dark chocolate, chopped 226g
  • 1.5 cups sugar 300g
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour 125g
For the Cheesecake Layer
  • 16 oz cream cheese, softened 454g
  • 3/4 cup sugar 150g
  • 1 large egg
  • 1 tsp vanilla extract
For the Ganache
  • 8 oz dark chocolate, chopped 226g
  • 1/2 cup heavy cream 120ml

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a square baking pan with parchment paper, leaving some overhang for easy removal.
Brownie Base
  1. In a microwave-safe bowl, gently melt the butter and chopped dark chocolate together, stirring every 20 seconds until glossy.
  2. Whisk sugar into the melted chocolate mixture until it dissolves. Add eggs one at a time, whisking briskly, then stir in vanilla extract.
  3. Gently fold the sifted flour into the wet ingredients using a spatula, mixing just until combined.
Cheesecake Layer
  1. Beat the softened cream cheese until smooth. Gradually add sugar, then the egg and vanilla, mixing until just combined.
Assemble and Bake
  1. Pour half of the brownie batter into the prepared pan. Dollop the cheesecake mixture over it. Spoon the remaining brownie batter on top and swirl with a knife.
  2. Place in the oven for 40-45 minutes, until the edges are set with a slightly jiggly center.
Prepare Ganache
  1. Heat heavy cream until simmering. Pour over chopped dark chocolate, let sit for a minute, then stir until smooth.
Finish and Serve
  1. Once brownies are cool, pour the ganache over the top. Chill until set and cut into squares to reveal the luscious layers.

Notes

For a fun twist, try adding a swirl of peanut butter or Nutella into the cheesecake layer. Use room temperature cream cheese to avoid lumps.
