Ingredients
  

For the dough
  • 4 cups flour
  • 1 cup warm milk (200ml)
  • 1 count egg
  • 65 grams softened butter
  • 10 grams instant yeast
  • 3 tablespoons sugar (60g)
  • 1 packet vanilla sugar
  • a pinch salt
For the apple filling
  • 2 count apples, peeled and diced
  • 2 tablespoons brown or white sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon cornstarch
  • 0.5 cup water
For the cheesecake filling
  • 200 grams cream cheese
  • 2 tablespoons sugar
  • 1 packet vanilla sugar
For the crumble topping
  • 1 tablespoon butter (20g)
  • 1 tablespoon sugar
  • 0.5 cup flour
For the glaze
  • 1 cup powdered sugar
  • 2 tablespoons milk
For brushing
  • 1 count egg yolk

Method
 

Prepare the Apple Filling
  1. In a saucepan, combine 2 diced apples, 2 tablespoons sugar, 1 teaspoon cinnamon, 1 teaspoon cornstarch, and ½ cup water. Cook over medium heat until the mixture thickens. Set it aside to cool.
Make the Cheesecake Filling
  1. Using an electric mixer, beat together 200g cream cheese, 2 tablespoons sugar, and 1 packet vanilla sugar until smooth and creamy. No lumps, please!
Assemble the Buns
  1. Punch down the risen dough and divide it into equal portions. Flatten each portion, place a spoonful of the cheesecake and apple filling in the center, and fold the edges to seal. Arrange them seam side down on a baking sheet.
Prepare the Crumble Topping
  1. In a bowl, combine 1 tablespoon butter, 1 tablespoon sugar, and ½ cup flour to make a crumbly mixture. Scatter it over the buns.
Bake the Buns
  1. Brush each bun with an egg yolk for a glossy finish. Bake at 350°F (175°C) for 20-25 minutes, until golden brown.
Add the Glaze
  1. Mix 1 cup powdered sugar with 2 tablespoons milk until smooth. Drizzle over the cooled buns for a sweet finish.

Notes

Serve these beauties warm, dusted with powdered sugar or a gentle drizzle of the sweet glaze. Store leftovers in an airtight container in the fridge for up to 3-4 days. They freeze beautifully for about a month.
