Method
Prepare the Apple Filling
- In a saucepan, combine 2 diced apples, 2 tablespoons sugar, 1 teaspoon cinnamon, 1 teaspoon cornstarch, and ½ cup water. Cook over medium heat until the mixture thickens. Set it aside to cool.
Make the Cheesecake Filling
- Using an electric mixer, beat together 200g cream cheese, 2 tablespoons sugar, and 1 packet vanilla sugar until smooth and creamy. No lumps, please!
Assemble the Buns
- Punch down the risen dough and divide it into equal portions. Flatten each portion, place a spoonful of the cheesecake and apple filling in the center, and fold the edges to seal. Arrange them seam side down on a baking sheet.
Prepare the Crumble Topping
- In a bowl, combine 1 tablespoon butter, 1 tablespoon sugar, and ½ cup flour to make a crumbly mixture. Scatter it over the buns.
Bake the Buns
- Brush each bun with an egg yolk for a glossy finish. Bake at 350°F (175°C) for 20-25 minutes, until golden brown.
Add the Glaze
- Mix 1 cup powdered sugar with 2 tablespoons milk until smooth. Drizzle over the cooled buns for a sweet finish.

Serve these beauties warm, dusted with powdered sugar or a gentle drizzle of the sweet glaze. Store leftovers in an airtight container in the fridge for up to 3-4 days. They freeze beautifully for about a month.
