  • 6 pieces high-protein tortillas or wraps
  • 1 cup lean ground turkey or chicken
  • ½ cup reduced-fat mozzarella cheese
  • ¼ cup turkey pepperoni slices
  • cup marinara sauce (no sugar added)
  • 1 tsp garlic powder
  • 1 tsp oregano
  • to taste olive oil spray or egg wash for crisping
  • optional chili flakes, fresh basil, cottage cheese or ricotta for extra creaminess

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Lay out the high-protein tortillas or wraps flat on a clean surface.
  3. In a medium bowl, combine the cooked, seasoned ground turkey or chicken with marinara sauce, garlic powder, and oregano. Mix until smooth and well-blended.
  4. Spread a thin layer of the meat filling onto each tortilla, keeping about half an inch of a border around the sides.
  5. Sprinkle the mozzarella cheese evenly over the meat filling.
  6. Layer on the turkey pepperoni slices for that savory flavor.
  7. Starting from one edge, roll the filled tortillas tightly to form compact logs. If needed, use a dab of the meat mixture to stick the edges.
  8. Place the rolls seam-side down on a baking sheet lined with parchment paper.
  9. Brush the tops lightly with olive oil spray or an egg wash for that golden finish.
  10. Bake in the preheated oven for 12-15 minutes, until the edges are crispy and cheese has melted.
  11. Let cool slightly before serving.
Serving
  1. Garnish with optional chili flakes, fresh basil, or extra cottage cheese. Enjoy with your favorite dipping sauce!

Notes

Store leftovers in the fridge for up to 3-4 days in an airtight container. You can also freeze them for longer storage — they'll stay good for about 2-3 months. To reheat, pop them in the oven at 350°F (175°C) for about 10 minutes, or until warmed through.
