  • 1/2 cup shredded cheese Optional; omit if lactose-intolerant.

  • 1/2 teaspoon garlic powder Optional for added flavor.
  • 1/2 teaspoon paprika Optional for a slight kick.

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, whisk the egg whites until frothy.
  3. Stir in the diced vegetables, cheese, salt, pepper, and any optional spices.
  4. Pour the mixture evenly into the muffin tin cups.
  5. Bake for 15-20 minutes, or until the egg bites are set and lightly golden.
  6. Allow to cool slightly before removing from the tin. Enjoy warm, or store in the fridge for meal prep!

Notes

These bites are great for meal prep and can last up to 5 days in the fridge. Freeze them for up to a month and reheat for a quick snack or breakfast.
