- In a bowl, whisk together the eggs, salt, and pepper.
Cooking
- In a skillet, sauté the onions and bell peppers over medium heat until soft.
- Add the cooked turkey and black beans, and cook until heated through.
- Pour the eggs into the skillet and scramble until fully cooked.
- Add the spinach and stir until wilted.
- Warm the tortilla in another skillet for a few seconds on each side.
- Place the egg mixture in the center of the tortilla, add your favorite toppings, and roll it up tightly.
- Serve immediately or wrap it up for a meal on-the-go.
Notes
Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months. To reheat, microwave for a minute or two, or warm in a skillet.
