- Sear one side of the chicken for about 4-5 minutes until golden crust forms, then flip and cook the other side until fully cooked (internal temp of 165°F).
Sauce Preparation
- In a small bowl, mix ranch dressing and barbecue sauce until smooth.
Assembly
- Slice the cooked chicken into strips and lay them over cooked grains like quinoa or brown rice.
- Add the cottage cheese on top of the chicken.
- Sprinkle the reduced-fat shredded cheddar cheese over everything and let it melt slightly.
- Drizzle with BBQ ranch sauce and mix gently before serving.
