Preparation
  1. Pat the chicken fillet dry with paper towels and season with salt and pepper.
Cooking
  1. Heat a non-stick skillet over medium-high heat with a splash of olive oil.
  2. Sear one side of the chicken for about 4-5 minutes until golden crust forms, then flip and cook the other side until fully cooked (internal temp of 165°F).
Sauce Preparation
  1. In a small bowl, mix ranch dressing and barbecue sauce until smooth.
Assembly
  1. Slice the cooked chicken into strips and lay them over cooked grains like quinoa or brown rice.
  2. Add the cottage cheese on top of the chicken.
  3. Sprinkle the reduced-fat shredded cheddar cheese over everything and let it melt slightly.
