Preparation
- Preheat your oven to 350°F (175°C) and grease two 8×4-inch loaf pans generously with cooking spray or butter. For extra peace of mind, line the bottom with parchment paper.
- In a large bowl, whisk together the eggs, granulated sugar, oil, and vanilla extract until smooth and well combined.
- In a separate bowl, mix together the flour, apple pie spice, cinnamon, salt, and baking soda.
- Add the dry ingredients to the wet mixture and stir just until incorporated — do not overmix.
- Gently fold in the grated zucchini and chopped apple pieces.
Streusel Topping
- In a small bowl, mix the flour, brown sugar, apple pie spice, and cinnamon.
- Pour in the melted butter and stir with a fork until crumbly.
Baking
- Divide the batter evenly between the prepared loaf pans and sprinkle the streusel generously over the top.
- Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the loaves cool in the pans for 15 minutes before transferring to a wire rack.
