Wet Ingredients
  • 3 large eggs
  • 2 cups granulated sugar
  • 1 cup vegetable or canola oil
  • 1.5 tsp vanilla extract
Dry Ingredients
  • 3 cups all-purpose flour
  • 1 tsp apple pie spice
  • 0.5 tsp cinnamon
  • 0.5 tsp salt
  • 0.25 tsp baking soda
Fruits and Vegetables
  • 2 cups grated zucchini Grated finely
  • 1 large gala apple, peeled and finely chopped
Streusel Topping
  • 0.5 cup all-purpose flour
  • 0.5 cup packed brown sugar
  • 0.5 tsp apple pie spice
  • 0.5 tsp cinnamon
  • 4-5 tbsp butter, melted

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease two 8×4-inch loaf pans generously with cooking spray or butter. For extra peace of mind, line the bottom with parchment paper.
  2. In a large bowl, whisk together the eggs, granulated sugar, oil, and vanilla extract until smooth and well combined.
  3. In a separate bowl, mix together the flour, apple pie spice, cinnamon, salt, and baking soda.
  4. Add the dry ingredients to the wet mixture and stir just until incorporated — do not overmix.
  5. Gently fold in the grated zucchini and chopped apple pieces.
Streusel Topping
  1. In a small bowl, mix the flour, brown sugar, apple pie spice, and cinnamon.
  2. Pour in the melted butter and stir with a fork until crumbly.
Baking
  1. Divide the batter evenly between the prepared loaf pans and sprinkle the streusel generously over the top.
  2. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
  3. Let the loaves cool in the pans for 15 minutes before transferring to a wire rack.

Notes

For optimal flavor, slice and serve with butter or whipped cream cheese. Store in an airtight container for 3-5 days at room temperature, or freeze slices for up to 3 months.
