  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
Wet Ingredients
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 tablespoons melted butter
Filling
  • 1 1/2 cups diced apples (about 2 medium apples)

Preparation
  1. Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, salt, cinnamon, and nutmeg until well combined.
  3. In a separate medium bowl, combine the wet ingredients: milk, eggs, vanilla, and melted butter. Whisk until slightly foamy.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined.
  5. Gently fold in the diced apples until evenly distributed throughout the batter.
Baking
  1. Using a large spoon or ice cream scoop, drop mounds of batter (about ¼ cup each) onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake for 14-16 minutes until the fritters are golden brown and a toothpick comes out clean.
  3. Transfer to a wire rack to cool slightly before serving. Dust with powdered sugar or drizzle with a simple glaze made from powdered sugar and milk.

Notes

Serve warm, dusted with powdered sugar, or with a side of caramel sauce or vanilla ice cream. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
