Preparation
- Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper or lightly grease it with cooking spray.
- In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, salt, cinnamon, and nutmeg until well combined.
- In a separate medium bowl, combine the wet ingredients: milk, eggs, vanilla, and melted butter. Whisk until slightly foamy.
- Pour the wet ingredients into the dry ingredients and stir just until combined.
- Gently fold in the diced apples until evenly distributed throughout the batter.
Baking
- Using a large spoon or ice cream scoop, drop mounds of batter (about ¼ cup each) onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 14-16 minutes until the fritters are golden brown and a toothpick comes out clean.
- Transfer to a wire rack to cool slightly before serving. Dust with powdered sugar or drizzle with a simple glaze made from powdered sugar and milk.
Notes
Serve warm, dusted with powdered sugar, or with a side of caramel sauce or vanilla ice cream. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
