Method
 

Preparation
  1. Peel and grate the sweet potatoes. Use a clean kitchen towel to squeeze out excess moisture.
  2. In a large bowl, combine the grated sweet potatoes, onion, garlic, olive oil, salt, and pepper.
Cooking
  1. Heat a non-stick skillet over medium heat. Add a little more olive oil if necessary.
  2. Form the sweet potato mixture into patties and place them in the skillet.
  3. Cook for about 4-5 minutes on each side, or until golden brown and crispy.
Serving
  1. Serve warm, garnished with fresh herbs if desired.

Notes

Grating the sweet potatoes thinly helps them cook quicker and get crispy. For a spicy kick, add a pinch of cayenne pepper. You can customize with veggies or make them fluffier by adding cornstarch. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 3 months.
