- Form the sweet potato mixture into patties and place them in the skillet.

Notes
Grating the sweet potatoes thinly helps them cook quicker and get crispy. For a spicy kick, add a pinch of cayenne pepper. You can customize with veggies or make them fluffier by adding cornstarch. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 3 months.
