Preparation
- In a large bowl, combine corn, red onion, bell pepper, and cilantro.
- In a separate bowl, mix Greek yogurt and lime juice until well combined.
- Pour the yogurt mixture over the corn and vegetable mixture. Stir well to coat all ingredients.
- Season with salt, pepper, and chili powder if desired.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Store in an airtight container for up to 3 days. For a plant-based version, substitute vegan yogurt and cilantro for parsley.
