  • 4 cups corn kernels (fresh, frozen, or canned)
  • 1 cup Greek yogurt
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup cilantro, chopped
  • 1 unit lime, juiced
  • Salt and pepper, to taste
  • Chili powder (optional for those who like a little kick!)

Method
 

Preparation
  1. In a large bowl, combine corn, red onion, bell pepper, and cilantro.
  2. In a separate bowl, mix Greek yogurt and lime juice until well combined.
  3. Pour the yogurt mixture over the corn and vegetable mixture. Stir well to coat all ingredients.
  4. Season with salt, pepper, and chili powder if desired.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Store in an airtight container for up to 3 days. For a plant-based version, substitute vegan yogurt and cilantro for parsley.
