Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the onions until they’re translucent.
  3. Add the spinach and cook until it’s wilted.
  4. In a bowl, whisk together the eggs, milk, salt, pepper, and optional nutmeg.
  5. Lay the pie crust in a pie dish, then add the cooked spinach and onions.
  6. Sprinkle the feta cheese on top.
  7. Pour the egg mixture over the filling.
  8. Bake for 35-40 minutes or until the quiche is set and the top is golden.
  9. Allow to cool for a few minutes before slicing and serving.

Notes

This quiche can be served warm or at room temperature. It pairs well with a fresh salad. Leftovers can be stored in the fridge for up to 4 days, or frozen for up to 3 months. Pro tip: Don’t skip the nutmeg; it adds a delicious hint of warmth!
