  • 1 tsp vanilla extract
  • 1 cup whole wheat flour All-purpose flour can be used as an alternative.

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add in the peanut butter, honey (or maple syrup), eggs, and vanilla extract. Mix until well combined.
  4. In another bowl, whisk together the whole wheat flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool before serving. Enjoy your nutritious muffins!

Notes

These muffins can last for about 5 days in the fridge and freeze beautifully for up to 3 months. Reheat in the microwave for a quick snack!
