Ingredients
  

Wet Ingredients
  • 1 cup Greek yogurt
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 1/2 cups whole wheat flour Spoon and level for accuracy
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Mix-ins
  • 1/2 cup chocolate chips Can substitute with dark chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix together Greek yogurt, honey (or maple syrup), eggs, and vanilla extract until smooth.
  3. In another bowl, whisk together whole wheat flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chocolate chips.
Baking
  1. Fill the muffin cups about 2/3 full with the batter.
  2. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
  3. Allow to cool for a few minutes before transferring to a wire rack. Enjoy your muffins!

Notes

Store muffins in the fridge for 3-5 days. Freeze for up to 3 months and reheat in the microwave.
