Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, mix together Greek yogurt, honey (or maple syrup), eggs, and vanilla extract until smooth.
- In another bowl, whisk together whole wheat flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips.
Baking
- Fill the muffin cups about 2/3 full with the batter.
- Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack. Enjoy your muffins!
Notes
Store muffins in the fridge for 3-5 days. Freeze for up to 3 months and reheat in the microwave.
