  • 1/4 cup honey Maple syrup can be used as an alternative for sweetness.
  • 1 piece egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour Can mix with whole wheat flour for added nutrition.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips or nuts Optional for added crunch.

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Mash the ripe bananas in a large bowl until smooth.
  3. Mix in Greek yogurt, honey, egg, and vanilla until well combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Combine the wet and dry ingredients, mixing just until blended.
  6. Fold in chocolate chips or nuts if desired.
  7. Fill muffin cups about 2/3 full with the batter.
Baking
  1. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  2. Let cool before enjoying.

Notes

These muffins can be stored in an airtight container for up to 3 days at room temperature, or refrigerated for about a week. Freeze for longer storage, up to 3 months. Reheat in the microwave or oven when ready to enjoy.
