- Peel your hard-boiled eggs and slice them in half.
- Crumble the crispy bacon into small pieces.
- In a bowl, mix the diced tomato, mayonnaise, and crumbled bacon. Add salt and pepper to taste.
- Scoop the mixture into each egg half and top it with a small leaf of lettuce.
- Stick a toothpick through each one to keep it together and present your delicious bites.
Notes
Store these bites in an airtight container in the fridge for up to 3 days. Best if eaten fresh! Feel free to swap out bacon for turkey bacon or crispy tofu.
