  • 4 slices crispy bacon Crumble it into small pieces.
  • 1 small tomato, diced
  • 2 cups fresh lettuce or favorite greens Use small leaves to top the bites.
  • 2 tablespoons mayonnaise Can substitute with avocado for a vegan option.
  • Salt and pepper to taste Don't skip on these for flavor!
  • Toothpicks for serving

Preparation
  1. Peel your hard-boiled eggs and slice them in half.
  2. Crumble the crispy bacon into small pieces.
  3. In a bowl, mix the diced tomato, mayonnaise, and crumbled bacon. Add salt and pepper to taste.
  4. Scoop the mixture into each egg half and top it with a small leaf of lettuce.
  5. Stick a toothpick through each one to keep it together and present your delicious bites.

Notes

Store these bites in an airtight container in the fridge for up to 3 days. Best if eaten fresh! Feel free to swap out bacon for turkey bacon or crispy tofu.
