Ingredients
  

Vegetables
  • 2 medium Bell peppers Any color
  • 2 medium Zucchini
  • 1 medium Red onion
  • 8 oz Mushrooms Whole or halved
Marinade
  • 2 tbsp Olive oil
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 1 tsp Black pepper
Other
  • 8 pieces Skewers Soak wooden skewers in water for 30 minutes before grilling

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. Chop the bell peppers, zucchini, red onion, and mushrooms into bite-sized pieces.
  3. In a bowl, combine the vegetables with olive oil, garlic powder, salt, and black pepper.
  4. Thread the marinated vegetables onto the skewers.
Cooking
  1. Grill the skewers for 10-15 minutes, turning occasionally, until the veggies are tender and slightly charred.
  2. Serve hot as a side dish.

Notes

Let the veggies marinate for at least 15 minutes for full flavor. Serve with balsamic glaze, hummus, or incorporate other veggies you enjoy.
