Ingredients
  

For the Shrimp
  • 1 pound shrimp Make sure they are peeled and deveined.
  • 2 tablespoons olive oil For seasoning the shrimp.
  • 1 teaspoon salt
  • 1 teaspoon pepper
For the Salsa
  • 1 medium avocado, diced
  • 1 cup corn, fresh or frozen If using frozen, thaw before mixing.
  • 2 cloves garlic, minced Toast for extra flavor.
  • 1 medium bell pepper, diced Any color bell pepper works.
  • 1 medium red onion, chopped
  • 1/4 cup cilantro, chopped Fresh for garnish.

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine diced avocado, corn, minced garlic, lime juice, diced bell pepper, chopped red onion, and chopped cilantro; season with salt and pepper.
Cooking
  1. Toss the shrimp with olive oil, salt, and pepper.
  2. Grill the shrimp for 2-3 minutes on each side until they are opaque and cooked through.
Assembly
  1. Serve the grilled shrimp on a bed of vegetables and top with the avocado corn salsa. Enjoy!

Notes

For meal prep, store components separately for best freshness. Shrimp can be gently reheated in the microwave or a pan.
