Ingredients
  

For the marinade
  • 1 pound large shrimp, peeled and deveined Opt for fresh shrimp if possible.
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice Preferably fresh lemon juice.
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper Adjust based on heat preference.
  • Salt and pepper to taste
For garnish
  • Fresh parsley, chopped For serving.

Method
 

Preparation
  1. In a bowl, whisk together olive oil, lemon juice, garlic, paprika, cayenne pepper, salt, and pepper.
  2. Add the shrimp to the marinade and toss to coat.
  3. Let it marinate for 30 minutes.
Cooking
  1. Preheat the grill to medium-high heat.
  2. Thread the shrimp onto skewers.
  3. Grill the shrimp for 2-3 minutes per side until pink and cooked through.
  4. Remove from the grill, garnish with fresh parsley, and serve.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For a tropical twist, add mango or pineapple chunks before grilling. Vegetarian alternative: marinated tofu or veggies like bell peppers and zucchini.
