- In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the corn and cook for a few more minutes.
- Pour in the seafood stock and bring to a boil.
- Reduce the heat and add the shrimp, cooking until they turn pink, about 3-5 minutes.
- Stir in the heavy cream and Old Bay seasoning. Allow to simmer for about 10 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped parsley.
Notes
For extra texture, top with crispy bacon bits or toasted bread crumbs. To adjust spice level, add a dash of hot sauce before serving.
