Preparation
- Cream together ½ cup softened unsalted butter with ⅓ cup granulated sugar and ⅓ cup light brown sugar until it's light and fluffy.
- Incorporate the egg, vinegar, red gel food color, and vanilla, mixing until the dough is evenly colored.
- In another bowl, whisk and sift the dry ingredients: all-purpose flour, cocoa powder, baking soda, baking powder, and salt.
- Gradually fold the dry mixture into the wet ingredients until the dough is soft and slightly sticky.
- Chill the dough for at least 1 hour to firm it up.
Baking
- Preheat your oven to 350°F (175°C). Scoop tablespoons of dough onto a parchment-lined baking sheet.
- Bake for 10-12 minutes until the edges are firm and centers are soft.
Frosting
- While the cookies cool, prepare the frosting by beating softened butter with cream cheese until smooth.
- Stir in sifted icing sugar and vanilla until well combined.
- Once cookies are cool, frost them with the cream cheese frosting.
