Ingredients
  

Egg Mixture
  • 6 pieces hard-boiled eggs Use day-old hard-boiled eggs for easier peeling.
  • 1/4 cup mayonnaise For a vegan twist, substitute with avocado or plant-based mayo.
  • 1 teaspoon Dijon mustard Adds tangy flavor to the filling.
  • to taste Salt Season to preference.
  • to taste Pepper Season to preference.
  • 1/4 teaspoon paprika Garnish with additional paprika for color.
Coating
  • 1 cup breadcrumbs Panko breadcrumbs can add extra crunch.
  • as needed Oil For frying. Make sure it's hot enough for perfect crunch.

Method
 

Preparation
  1. Slice the hard-boiled eggs in half and remove the yolks.
  2. In a bowl, mash the yolks with mayonnaise, Dijon mustard, salt, pepper, and paprika until smooth.
  3. Spoon or pipe the yolk mixture back into the egg whites.
  4. Dip each filled egg into breadcrumbs to coat.
Cooking
  1. In a skillet, heat oil over medium heat.
  2. Fry the coated eggs until golden brown on both sides, about 2-3 minutes.
  3. Remove from the skillet and drain on paper towels.
Serving
  1. Serve warm and enjoy!

Notes

Garnish with fresh herbs like chives or dill for a pop of color. Serve with sriracha or spicy aioli for an extra kick.
