  • 2 cups Fresh corn kernels Use fresh corn off the cob for the best taste.
  • 1 large Ripe avocado Squeeze gently to maintain creaminess.
  • 1 cup Cherry tomatoes or diced tomatoes Add diced tomatoes for a different flavor.
  • 1/2 cup Red onion, diced
  • 1/4 cup Fresh cilantro, chopped
Dressing
  • 2 tablespoons Fresh lime juice
  • 2 tablespoons Olive oil
  • 1/2 teaspoon Salt To taste.
  • 1/4 teaspoon Pepper To taste.

Method
 

Preparation
  1. In a large bowl, combine fresh corn, diced avocado, chopped tomatoes, and diced red onion.
  2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad and add chopped cilantro.
  4. Toss gently to combine.
  5. Serve immediately or let chill in the fridge for 30 minutes to enhance the flavors.

Notes

This salad lasts in the fridge for about 2-3 days. Store the dressing separately to keep the salad crisp. Add cumin or chili powder for a spicy kick! Consider swapping out cherry tomatoes for diced mango for a sweet twist.
