Dressing
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp sugar
  • to taste Kosher salt
  • to taste Freshly ground black pepper
Watermelon Salad
  • 1/2 small watermelon, rind discarded and sliced
  • 1/3 cup torn fresh mint
  • for garnish Flaky sea salt
  • 2 strips lime zest, sliced

Method
 

Preparation
  1. Whisk together the olive oil, lime juice, and sugar in a bowl.
  2. Season with kosher salt and black pepper to taste.
  3. Serve the watermelon topped with the dressing, lime zest, torn mint, and a sprinkle of flaky sea salt.

Notes

Use a seedless watermelon for easy slicing and maximum enjoyment. Chill your watermelon before serving to enhance the crunch. If mint isn’t your thing, consider basil or cilantro as alternatives.
