  • 6 large large eggs Hard boiled
  • 3 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard Can substitute with yellow mustard
  • to taste Salt
  • to taste Pepper
  • for garnish Paprika
  • for garnish Fresh herbs (like chives or parsley)

Method
 

Hard Boiling the Eggs
  1. Place eggs in a pot and cover with water. Bring to a boil, then cover and remove from heat. Let them sit for 12 minutes.
  2. Transfer the eggs to an ice bath to cool.
Preparation
  1. Peel and slice the eggs in half lengthwise.
  2. Remove the yolks and place them in a bowl. Mash the yolks with mayonnaise, Dijon mustard, salt, and pepper until smooth.
  3. Spoon or pipe the yolk mixture back into the egg whites.
  4. Sprinkle with paprika and fresh herbs for garnish. Serve immediately or chill before serving.

Notes

These deviled eggs can stay fresh in the fridge for up to two days when stored in an airtight container. To prepare ahead, store filling separately from the egg whites.
