  • 4 cloves garlic, minced
  • 1 each lemon, juiced and zested
  • 1 cup chicken broth can be substituted with vegetable broth

  • to taste Pepper
  • for garnish Fresh herbs (like parsley or basil)

Method
 

Preparation
  1. Cook the orzo pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
Cooking
  1. Add the shrimp and cook until pink and opaque, about 3-4 minutes.
  2. Pour in the chicken broth, lemon juice, and lemon zest; bring to a simmer.
  3. Stir in the cooked orzo and mix well. Season with salt and pepper to taste.
  4. Garnish with fresh herbs before serving.

Notes

Store leftovers in an airtight container in the fridge for about 3 days. Reheat in the microwave or on the stovetop, adding a splash of broth or water to maintain creaminess.
