Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with olive oil or cooking spray.
  2. In a mixing bowl, whisk together the ricotta, eggs, shredded cheese, chopped herbs, salt, and pepper until well combined.
  3. Pour the mixture evenly into the prepared muffin tin, filling each cup about three-quarters full.
  4. Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden on top.
  5. Let cool slightly, then remove from the muffin tin and serve warm or at room temperature.

Notes

These bites are refrigerator-friendly and will keep for about 3-4 days. They freeze well too! Just thaw and reheat when you're ready for a snack. For extra fluffiness, beat the eggs well before adding the ricotta. You can also substitute in different cheeses or add ingredients like spinach or cooked bacon.
