  • 4 ears corn, husked Fresh corn is best for grilling.
  • 2 tablespoons olive oil Used for brushing the corn.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Adjust to taste.
Sauce Ingredients
  • 1/4 cup mayonnaise Base for the creamy topping.
  • 1/4 cup cotija cheese, crumbled Can substitute with vegan cheese or nutritional yeast.
  • 1 tablespoon lime juice For zesty flavor.
  • 1/4 teaspoon chili powder For a hint of spice.
  • to taste Fresh cilantro, for garnish Add a pop of color and flavor.

Method
 

Preparation
  1. Preheat a grill to medium-high heat.
  2. In a bowl, mix together the olive oil, salt, and pepper. Brush the mixture over the corn.
Grilling
  1. Place the corn on the grill and cook, turning occasionally, until charred and tender, about 10-15 minutes.
Assembly
  1. In a separate bowl, combine mayonnaise, cotija cheese, lime juice, and chili powder.
  2. Once the corn is grilled, remove from heat and slather the mayo mixture over the corn.
  3. Garnish with fresh cilantro and serve immediately.

Notes

If you have leftovers, store them in an airtight container in the fridge for about 3-5 days. Reheat in the microwave with a splash of water.
