Preparation
- Preheat a grill to medium-high heat.
- In a bowl, mix together the olive oil, salt, and pepper. Brush the mixture over the corn.
Grilling
- Place the corn on the grill and cook, turning occasionally, until charred and tender, about 10-15 minutes.
Assembly
- In a separate bowl, combine mayonnaise, cotija cheese, lime juice, and chili powder.
- Once the corn is grilled, remove from heat and slather the mayo mixture over the corn.
- Garnish with fresh cilantro and serve immediately.
Notes
If you have leftovers, store them in an airtight container in the fridge for about 3-5 days. Reheat in the microwave with a splash of water.
