  • 1 large Fresh cucumber Thinly sliced
  • 8 oz Cream cheese Softened
  • 4 slices Soft bread White or whole grain
  • 1 pinch Salt
  • 1 pinch Pepper
  • 2 tbsp Fresh dill or other herbs Optional

Method
 

Preparation
  1. Wash and slice the cucumber thinly.
  2. In a bowl, mix the cream cheese with salt, pepper, and any herbs you like to taste.
  3. Spread the cream cheese mixture evenly on one side of each slice of bread.
  4. Layer cucumber slices on top of the cream cheese on half of the bread slices.
  5. Place the other half of the bread on top and press gently.
  6. Cut the sandwiches into quarters or triangles.
  7. Serve immediately or refrigerate until serving.

Notes

These sandwiches are best enjoyed fresh but can be stored in an airtight container in the fridge for a day or two. For a variation, consider using plant-based cream cheese for a vegan option.
