Preparation
- Wash and dry the strawberries.
- Slice the strawberries in half, lengthwise (keeping the stems is optional).
- Score a triangle shape in the center of each strawberry half.
- Remove a bit of the flesh from the center using a small spoon or melon baller to create space for the filling.
- Drain the prepared strawberries cut side down on paper towels for a couple of minutes.
Filling
- In a large bowl, stir together the whipped cream cheese, powdered sugar, lemon zest, and vanilla until very smooth.
- Transfer the cream cheese mixture into a piping bag or a Ziploc bag with a corner cut off.
- Pipe the filling into the center of each strawberry.
- Garnish with graham cracker crumbs and sprinkles.
Serving
- Serve immediately after garnishing.
Notes
These strawberries are best enjoyed fresh but can be stored in the fridge for 1-2 days. For best flavor, fill them right before serving.
