  • 6 large large eggs Use older eggs for easier peeling.
  • 2 tablespoons goat cheese Creamy and tangy flavor.
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • to taste Salt and pepper
  • for garnish Paprika Sprinkle on top.
  • for garnish Chives or parsley Adds a pop of color.

Method
 

Preparation
  1. Hard boil the eggs by placing them in a pot of cold water and bringing to a boil. Reduce heat and simmer for 9-12 minutes.
  2. Remove from heat, cool in ice water, then peel the eggs.
  3. Slice eggs in half lengthwise and remove yolks into a mixing bowl.
Filling
  1. Mash the yolks with goat cheese, mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth.
  2. Spoon or pipe the mixture back into the egg white halves.
Garnishing
  1. Sprinkle with paprika and garnish with chives or parsley.
  2. Serve chilled.

Notes

Make-ahead tip: prepare the filling a day ahead and stuff the eggs just before serving! Deviled eggs are best eaten within 2-3 days if refrigerated.
