Preparation
- Hard boil the eggs by placing them in a pot of water and bringing it to a boil. Boil for 9-12 minutes, then cool in ice water.
- Peel the eggs and cut them in half lengthwise.
- Remove the yolks and place them in a bowl.
- Mash the yolks with mayonnaise, mustard, and relish juice.
- Season with salt and pepper to taste.
- Fill the egg whites with the yolk mixture and sprinkle paprika on top for garnish. Serve.
Notes
Store in the fridge in an airtight container for 3 to 4 days. Do not freeze. You can make them a day ahead of time to enhance flavors.
