Ingredients
  

Dry Ingredients
  • 1 cup whole wheat flour
  • 1/2 cup oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup almond milk or any milk of choice
  • 1/3 cup honey or maple syrup
  • 1/4 cup vegetable oil
  • 1 ripe banana mashed
  • 1 teaspoon vanilla extract
Optional Add-ins
  • 1/2 cup mixed nuts, fruits, or seeds optional

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners or grease it.
  2. In a large bowl, mix together the flour, oats, baking powder, baking soda, and salt.
  3. In another bowl, whisk the almond milk, honey (or maple syrup), vegetable oil, mashed banana, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in any optional fruits, nuts, or seeds you like.
  6. Divide the batter evenly into the prepared muffin tin.
Baking
  1. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  2. Let cool for a few minutes before transferring to a wire rack.

Notes

For the best flavor, use very ripe bananas. Customs can include spices like cinnamon or nutmeg. For nut allergies, try using chocolate chips or dried fruits instead.
