- Fold in the shredded coconut, chopped cherries, and chopped pecans until evenly distributed.
- Scoop tablespoon-sized portions and roll them into smooth balls. Place on a parchment-lined baking sheet and refrigerate for 30 minutes.
- Melt the chocolate chips and shortening together in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.
- Dip each chilled ball into the melted chocolate, letting the excess drip off before placing them back on parchment.
- Refrigerate the chocolate-covered balls for at least 2 hours until the chocolate is fully set.
