Preparation
  1. Cream the butter in a large mixing bowl until light and fluffy.
  2. Blend in the vanilla extract and sweetened condensed milk until completely smooth—about 2-3 minutes with an electric mixer.
  3. Gradually add the powdered sugar, about one cup at a time, mixing thoroughly between additions.
  4. Fold in the shredded coconut, chopped cherries, and chopped pecans until evenly distributed.
  5. Scoop tablespoon-sized portions and roll them into smooth balls. Place on a parchment-lined baking sheet and refrigerate for 30 minutes.
  6. Melt the chocolate chips and shortening together in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.
  7. Dip each chilled ball into the melted chocolate, letting the excess drip off before placing them back on parchment.
  8. Refrigerate the chocolate-covered balls for at least 2 hours until the chocolate is fully set.

Notes

Store in an airtight container in the refrigerator for up to a week. For freezing, ensure they're well-wrapped. Let them sit at room temperature for about 10 minutes before serving for best flavor.
