  • 4 large eggs
  • 1/2 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1 cup spinach (fresh or frozen)
  • 1/2 cup chopped onion
  • Salt and pepper to taste
  • Olive oil (for greasing)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease a baking dish with olive oil.
  3. In a mixing bowl, whisk together the ricotta cheese, eggs, and milk until smooth.
  4. Stir in the grated Parmesan cheese, spinach, onion, salt, and pepper.
  5. Pour the mixture into the greased baking dish, spreading it evenly.
Baking
  1. Bake for 35-40 minutes, or until the quiche is set and lightly golden on top.
  2. Let it cool slightly before slicing and serving.

Notes

You can store leftovers in the fridge for about 3-4 days or freeze for up to 2 months. Reheat in the oven or microwave. For a lighter option, use cottage cheese instead of ricotta.
