Ingredients
  

Main Ingredients
  • 6 large large eggs
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1 1/2 cups shredded cheese (cheddar or Gruyère)
  • 1 cup diced vegetables (spinach, mushrooms, peppers, or zucchini)
  • 1/2 cup cooked bacon or ham (optional) For added flavor
  • 1 small onion, finely chopped
  • 1 tbsp olive oil or butter
  • Salt and pepper, to taste
  • 2 tbsp fresh herbs, chopped Add just before serving

Method
 

Preparation
  1. Preheat your oven to 375°F and grease a 9-inch pie dish.
  2. Sauté the onion in olive oil until fragrant, then add your diced veggies. Cook until tender, then let cool slightly.
Mixing
  1. In a mixing bowl, whisk together the eggs, heavy cream, milk, salt, and pepper.
  2. Stir in the sautéed vegetables, cheese, and bacon/ham (if using).
Baking
  1. Pour the mixture into the greased pie dish and pop it in the oven.
  2. Bake for 30–35 minutes or until the quiche is set and golden on top.
  3. Cool for about 5–10 minutes, slice it up, and serve warm or at room temperature.

Notes

Leftovers can be kept in the fridge for about 3–4 days. For longer storage, freeze for up to 2 months. Reheat in the oven or microwave.
