Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together 1/2 cup of softened butter, 1/3 cup of brown sugar, and 1/4 cup of granulated sugar until light and fluffy, about 2-3 minutes.
- Add in 1 tablespoon of vanilla extract and 1 egg. Beat until fully integrated, leaving no streaks behind.
- In another bowl, combine 1 cup of all-purpose flour, 1/4 teaspoon of cinnamon, a pinch of nutmeg, 1/2 teaspoon of baking soda, and 1/4 teaspoon of salt. Stir well for even distribution.
- Gradually add the dry ingredients to the wet mixture, folding gently. Then pour in 1 & 1/4 cup of old-fashioned oats, mixing until just combined (no overmixing allowed!).
- Using a tablespoon or cookie scoop, scoop the dough onto your prepared baking sheet. Lightly flatten each scoop for even baking.
Baking
- Bake for 10-12 minutes or until edges are golden, and the centers are set.
- Allow cookies to cool completely before icing.
Icing
- For the icing, whisk together 3/4 cup of powdered sugar, 1.5 tablespoons of milk, and 1/4 teaspoon of vanilla until smooth.
- Drizzle generously over the cookies.
Notes
Store these cookies for about a week in an airtight container at room temperature. For a warm cookie experience, zap them in the microwave for a few seconds.
