Preparation
- Preheat your oven to 400°F (200°C).
- Cook the rice according to package instructions while you prepare the chicken.
- In a bowl, mix minced garlic, breadcrumbs, salt, and pepper.
- In another bowl, beat the egg.
- Dip chicken breasts in the egg, then coat with the breadcrumb mixture.
Cooking
- Heat olive oil in a skillet over medium heat and fry the chicken until golden brown on both sides.
- Transfer chicken to a baking dish and finish cooking in the oven for about 15-20 minutes.
Serving
- Serve the crispy garlic chicken over fluffy rice and garnish with fresh parsley.
Notes
Store leftovers separately in the fridge for up to 3 days. Reheat in the microwave or skillet. For a vegan option, substitute chicken with tofu or seitan and the egg with a cornstarch mixture.
