  • 2 pieces chicken breasts
  • 1 cup rice
  • 1/2 cup breadcrumbs Panko for extra crunch if desired.
  • 4 cloves garlic, minced More garlic means more flavor.
  • 1 piece egg For coating the chicken.
  • Salt and pepper to taste
  • Olive oil for frying
  • Fresh parsley for garnish Can be substituted with cilantro or basil.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Cook the rice according to package instructions while you prepare the chicken.
  3. In a bowl, mix minced garlic, breadcrumbs, salt, and pepper.
  4. In another bowl, beat the egg.
  5. Dip chicken breasts in the egg, then coat with the breadcrumb mixture.
Cooking
  1. Heat olive oil in a skillet over medium heat and fry the chicken until golden brown on both sides.
  2. Transfer chicken to a baking dish and finish cooking in the oven for about 15-20 minutes.
Serving
  1. Serve the crispy garlic chicken over fluffy rice and garnish with fresh parsley.

Notes

Store leftovers separately in the fridge for up to 3 days. Reheat in the microwave or skillet. For a vegan option, substitute chicken with tofu or seitan and the egg with a cornstarch mixture.
