Ingredients
  

For the Salmon Bites
  • 1 pound salmon, skinless and cut into bite-sized pieces
  • 1 cup panko bread crumbs Use Japanese panko for extra crunch.
  • 1/2 cup flour For coating.
  • 2 large eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • Oil for frying Prepare enough for deep frying.
For the Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha sauce Adjust for more heat if desired.

Preparation
  1. In a bowl, mix garlic powder, paprika, salt, and pepper with the flour.
  2. Dredge the salmon pieces in the flour mix.
  3. Dip them into the beaten eggs.
  4. Finally, coat them in panko bread crumbs.
Cooking
  1. Heat oil in a deep pan over medium heat.
  2. Fry the salmon bites until golden brown and crispy, about 3-4 minutes on each side.
Preparing the Sauce
  1. In another bowl, combine mayonnaise, sweet chili sauce, and sriracha to make the Bang Bang sauce.
Serving
  1. Serve the crispy salmon bites drizzled with the sauce.

Notes

To store leftovers, place in an airtight container in the fridge for up to 3 days. For longer storage, freeze them, but note that texture may change slightly. Reheat in the oven for best results.
