Ingredients
  

Pasta
  • 8 oz linguine or fettuccine pasta
Sauce
  • 2 tbsp olive oil
  • 1 lb lobster meat, cooked and chopped Can use frozen lobster meat, thawed.
  • 1 can (14 oz) diced tomatoes Include juices.
  • 1 cup heavy cream Can substitute with coconut cream or whole milk.
  • 3 cloves garlic, minced
  • 1/2 cup onion, finely chopped
  • 1/2 tsp red pepper flakes Optional, for heat.
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Grated Parmesan cheese

Method
 

Cooking the Pasta
  1. Cook the pasta according to package instructions until al dente; drain and set aside.
Preparing the Sauce
  1. In a large skillet, heat olive oil over medium heat. Add onion and garlic; sauté until onions are translucent.
  2. Add the diced tomatoes (with juices) and red pepper flakes; simmer for 5-7 minutes.
  3. Stir in the heavy cream and lobster meat; cook for another 3-5 minutes until heated through.
  4. Toss in the cooked pasta; season with salt and pepper.
Serving
  1. Serve hot, garnished with fresh basil and grated Parmesan cheese.

Notes

For extra flavor, add a splash of white wine during onion and garlic sauté. Options include substituting lobster with shrimp or crab. Consider adding spinach or zucchini for more nutrients.
