  • 1 lb gnocchi
  • 2 cups fresh spinach Can use frozen spinach, thawed and drained
  • 1 cup feta cheese, crumbled Substitute with goat cheese or ricotta if desired
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced Toasting the garlic adds extra flavor
  • to taste Salt and pepper

  • to taste grated Parmesan cheese For serving

Cooking
  1. In a large pot of salted boiling water, cook the gnocchi according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Toss in the fresh spinach and cook until wilted.
  4. Stir in the cooked gnocchi and crumbled feta cheese.
  5. Season with salt and pepper to taste.
  6. Cook until everything is heated through, about 3-4 minutes.
  7. Serve warm, topped with grated Parmesan cheese if desired.

Notes

This dish can be prepped ahead and stored in an airtight container in the fridge for about 3-4 days. It is freezer-friendly as well. Reheat in a skillet over low heat, adding a splash of water to maintain creaminess.
