  • 200 g pasta of your choice
  • 2 fillets salmon fillets Fresh or thawed if frozen
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese, grated (optional) For serving
  • Fresh parsley for garnish (optional) For serving

Method
 

Cooking
  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the salmon fillets to the skillet and cook for about 4-5 minutes per side, or until fully cooked. Remove salmon from the skillet and flake it into large pieces.
  4. In the same skillet, add the heavy cream, stirring to combine. Bring to a simmer, and season with salt and pepper.
  5. Add the cooked pasta and flaked salmon to the skillet, tossing to coat with the creamy sauce.
  6. Serve hot, topped with grated Parmesan cheese and fresh parsley if desired.

Notes

Store in an airtight container in the refrigerator for up to 3 days or freeze for longer storage. Reheat with a splash of cream or water.
