- Cook the gnocchi according to package instructions, then drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add the diced chicken and cook until browned and cooked through, about 6-8 minutes.
- Add minced garlic to the skillet and sauté for an additional minute.
- Pour in the heavy cream, lemon juice, and Parmesan cheese, stirring until the cheese is melted and the sauce is smooth.
- Add the cooked gnocchi to the skillet, mixing well to coat.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
If you have leftovers, store them in the fridge for up to 3 days. For reheating, use a microwave or stove with a splash of cream. To make it ahead, cook gnocchi and sauce separately.
