  • 2 cups cooked white rice Use leftover rice or prepare fresh.
  • 2 cups shredded cooked chicken Rotisserie chicken works well for convenience.
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) French onion soup
  • 1 cup sour cream
  • 1.5 cups shredded mozzarella or Swiss cheese Feel free to use your favorite cheese.
  • 1.5 cups French fried onions Divided for topping.
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • to taste salt and black pepper Adjust according to personal preference.
  • for garnish Chopped parsley Add freshness and color.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  2. In a large mixing bowl, combine cooked rice, shredded chicken, cream of chicken soup, French onion soup, sour cream, garlic powder, and onion powder. Use a rubber spatula to mix thoroughly.
  3. Season with salt and pepper, starting with less due to the soups already having salt.
  4. Transfer the mixture to the prepared baking dish and spread it evenly.
  5. Sprinkle 1 cup of shredded cheese and 1 cup of French fried onions over the top.
Baking
  1. Cover the dish with aluminum foil and bake for 20 minutes until hot and bubbly.
  2. Remove the foil, add the remaining ½ cup of cheese and ½ cup of French fried onions, then return to the oven uncovered for another 10 minutes.
  3. Let it rest for 5 minutes before serving.

Notes

Pair with a crisp salad or garlic bread for a complete meal. Store leftovers in the fridge for 3–4 days or freeze for up to 3 months. Reheat at 350°F (175°C) until warmed through.
