  • 4 fillets salmon fillets Preferably skin-on
  • 1 cup heavy cream
  • 1/2 cup chopped fresh chives Fresh is best for maximum flavor
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Season the salmon fillets with salt and pepper, then place them in the skillet skin-side down. Cook for about 5 minutes until golden brown.
  3. In a bowl, combine heavy cream, chopped chives, and lemon juice. Mix well.
  4. Pour the cream mixture over the salmon in the skillet.
  5. Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through.
  6. Serve hot with your favorite sides.

Notes

Store leftovers in an airtight container in the fridge for 2-3 days. Reheat gently on the stovetop or microwave.
